What metadata to strip

Location, date, and device metadata on the still-image component (the same fields a normal photo has), plus the same categories of metadata embedded separately in the short video clip bundled with it. If only the still image portion gets its metadata stripped, the paired video clip can still carry the original, unstripped data.

On iPhone, a Live Photo is typically a full-resolution still plus a short MOV (or similar) paired by the Photos library. On many Android phones, a Motion Photo embeds motion frames inside or beside a JPEG container. Either way, you are dealing with more than one media stream. GPS written at capture often lands on both.
